Aunt Shirley's Large Carrot Cake

1 1/2 c oil
2 c sugar
2 c grated carrots
1 c crushed pineapple
1 t cinnamon
1/2 tsp salt
2 T grated orange rind
1/2 c coconut
1 1/2 c chopped nuts
1 1/2 tsp vanilla
3 c flour
2 tsp soda
Mix together and bake in a 9x12 pan at 350 degrees for 50 minutes.
Frost with the following:
1- 4 oz soft cream cheese
1 lb powdered sugar
1/4 lb soft margarine
1 t vanilla
